01 Ground to order

Grind

Every bag is roasted in small batches and ground the morning it ships, set for the brewer you actually use. Prefer to grind at home? Choose whole bean.

02 Brew it slowly

Pour

Water just off the boil, a 45-second bloom, then slow circles. Every bag comes with a recipe card for that coffee, so the first cup tastes like the last.

Sip

Start with the house espresso, a washed Colombian or a bright natural from Ethiopia. Or let us rotate them for you every few weeks.

Four pours, three minutes.

The recipe we start every filter coffee on. Adjust grind first: sour means go finer, bitter or slow means go coarser.

Rinse the paper with hot water first and pour the rinse away. It removes the papery taste and warms the server.

  1. Bloom

    Wet all the grounds evenly and let the gas escape. Fresh coffee will rise and bubble.

  2. First pour

    Slow spirals from the centre out, avoiding the paper walls.

    → 150 g
  3. Second pour

    Same spiral, a little faster, keeping the bed level.

    → 250 g
  4. Swirl and draw down

    Give the brewer one gentle swirl to flatten the bed. Done when it drips slowly, around 3:00 to 3:30.
